Electric-Type Zesty Lemon Cupcake Recipe

You know me, I love cupcakes. And I like a craft-challenge (not so much a regular challenge). I’ve been craft-challenging myself to think up a whole collection of cupcake recipes for Pokemon types. This is only the beginning!


I will be trying to make other types over the next couple weeks. Successful recipes will be posted, so long as they don’t get eaten before I can get a good picture. (;


Recipe makes about 24 cupcakes.


For the Zesty Lemon Cake:
– 5 large egg whites
– 1 cup whole milk
– 2 teaspoons pure vanilla extract
– 1/4 cup fresh squeezed lemon juice
– 3 tablespoons lemon zest
– drop of orange extract
– 3 cups cake flour
– 1 3/4 cups sugar
– 1 tablespoon and 1 teaspoon baking powder
– 3/4 teaspoon salt
– 1 1/2 cup unsalted butter, at room temperature

For the Cream Cheese Frosting:
– 4 oz cream cheese, softened
– 3 cups confectioners’ sugar (add more if needed)
– 1/2 cup fresh squeezed lemon juice
– drop of orange extract


For the Cake:

Preheat oven to 350°F. Place liners in cupcake tins.

In a medium bowl or measuring cup, combine and stir the egg whites, 1/4 cup of milk, and the vanilla. Set aside. In a large bowl, combine the dry ingredients together on low speed. Add the butter and remaining milk, and mix on low speed until just moistened. Scrape the sides of the bowl and begin to add the egg mixture. Pour into cupcake liners. Bake 8-12 minutes or until a cake tester comes clean when inserted into the center. Be careful to not over-bake. Check cake at 8 minutes, but not before, and once you feel it’s almost ready, set the timer for 2 minute intervals. Let completely cool before frosting.

For the Frosting:

In a large bowl, whip cream cheese on low speed. Add remaining ingredients and mix on low speed until blended. If frosting is too thin, add more sugar, about a 1/2 cup of confectioners’ sugar at a time. If frosting is too thick, add more lemon juice or milk, about a tablespoon at a time. Add colour (optional). Best used right away.
